Moreno Animal farming-Salami factory was founded as the guardian of the old faeta salami art; handed on from the first producers of hams and salami from Faeto, the successor of the norcia art.   Ciro and Michelina work everyday in order to give national and international visibility to these high quality products.  Maybe not everybody knows that each salami is prepared according to different production methods, from 10-15 days to 12 months. Moreno's production follows homemade methods that respect the tradition, guaranteeing the excellent quality. Only the fondness for this work can give excellent products.The process of these products is concentrated in the period from October to April, because in these months the temperature (due to the altitude) and the humidity level (due to the river Celone) are perfect for the seasoning. The twenty-year experience taught us that the first secret to have an excellent salami is the careful selection of the pieces of fresh meat, that have to respect two main requirements: national-Italian meat and first quality meat (including the place of origin of the breeding).  Faeto is known for being the highest town in Apulia (866 m above the sea level.) and for its hams.Moreno Animal farming- Salami factory is the only black pig farming in the area.It is a local breed, enhanced within the project ‘the recovery of the black pig', wanted by the Comunità Montana of Monti Dauni, in collaboration with the C. N. R. of Lesina. The black pigs are breed in the wild state and they are different from the others for their height, the robustness and simplicity. Wooden constructions full with straw are the refuge for the smaller pigs (a black sow farrows on average 5-6 piglets and it usually farrows two times a year). Their nutrition is very simple, with roots, berries, maize (in the winter) and meal (in the summer) and it is at the base of the taste of this unique salami.     To personally test the goodness of the products you must visit Moreno Restaurant: the ambience is warm, welcoming and rustic. The kindness of the service, directed by the patron Ciro Moreno and the wholesomeness of the dishes prepared by the cook Michelina D'Onofrio make this restaurant an oasis of tradition and a pleasure for all those who have a fine palate.
