Description

In the province of Turin, in the area of Santona, famous for the festival of the local asparagus, the pasta factory Accademia Della Pasta Italiana adds prestige and fame to the city. If you think that the production processes are standardized, a chain where the working methods are aimed only to profit, not considering the quality of the product, now it’s time to change your mind.
The pasta factory Accademia della Pasta Italiana doesn’t produce pasta, but it creates art works, where the tastes and the perfumes revive in the Piedmontese and Italian culinary tradition. All the ingredients, necessary to the realization of various and different types of pasta produced, they are chosen after a careful selection to assure a high quality standard.
For example the vegetables come from the consortium of preservation of the territory of Santena and they are delivered weekly after its picking; the supply of Grana Padana and other dairy products derive from two renowned cheese factories. The meat used is Piedmontese or Fassone. Accademia Della Pasta Italiana avoids to make all compromises, and in the last thirty years it has been offering wholesome and high quality products, without using preservatives and artificial colouring. The product is worked and then frozen and delivered to the large-scale retail trade or to restaurants.
The recipe book includes both traditional Piedmontese and Italian recipes, trying to satisfy all requirements and desires. More than fifty specialties, that go from the Agnolotti stuffed with Piedmontese meat, the Liguria scented Mezzelune with potatoes, pine nuts and olives, products for all tastes.
